Garam Masala Powder

Cinnamon

50 gms.
Green Cardamom 50 gms.
Cloves 40 gms.
Black Pepper Corns 25 gms.
Bay Leaves 25 gms.
Cumin Seeds 75 gms.
Star Anise 40 gms.
Mace 20 gms.

 

Dry roast all ingredients lightly and allow to cool.
Grind to a fine powder.
Store in an airtight container, use as and when required.

 

 

 

 

Basic Tandoori Marination

Drained Yoghurt 2 kgs.
Garam Masala Powder 25 gms.
Ginger & Garlic Paste 100 gms.
Kashmiri Red Chilli Paste 200 gms.
Oil 100 ml.
Salt to taste

 

Beat yoghurt well to break all lumps.
Mix in all ingredients.
